Sixth of a Beef (Nov through March processing)

How our beef is sold?  We typically sell 1/4, 1/2 or Whole beeves.  We charge $2.75/ lb live weight and $.50 / lb processing fee, we butcher our beef between 800 and 1200 lbs.

We do offer a “Sixth of a beef or Third of a half beef”, but this offering has standard cuts versus our quarter, half and whole custom cuts.  We charge $3 / lb live weight and $.50 / lb processing fee.  The standard cuts are as follows:  1 chuck roast, 1 pack flat iron, 2 to 3 boneless ribeye, 2 to 3 bone in NY Strip, 2 to 3 filet mignons, 2 sirloins, 2 sirloin tips, 2 round roasts, 3 to 4 round steaks, 2 one pound packs of stew meat, 1 large pack of short ribs and approx 20 to 25 lbs of hamburger. 

A sixth of a beef will run approx $585.00 based on a 1000 lb beef.

Therefore a 1000 lb steer will yield about 350 lbs of finished edible meat.  At $2.75 /lb live weight and $.50 /lb processing fee, a 1000 lb steer would cost $3250, 1/2 of that steer would be $1625 (210 lbs) and 1/4 of that steer would be $812.50 (105 lbs).  We guarantee a finished price per pound of $10.00 or less depending on yield.  If the finished price exceeds $10 / lb we will adjust our fees.
